As summer comes to an end and the evenings become cool and crisp, we begin to switch gears and bring back all of our Fall favorites. Bring on the pumpkin spice lattes and the fuzzy fleece blankets! But when it comes to food, we can all agree that home cooked meals are the best, especially when the winter months are right around the corner. That’s why, at Paradiso Insurance, we went around the office and each gave one of our favorite fall recipes to share! (Links to recipes in titles)

Chris’s Favorite: Key lime Pie

What You’ll Need: 

  • 1 (9 in) prepared graham cracker crust 
  • 3 cups condensed milk
  • ½ cup sour cream
  • ¾ cup key lime juice
  • 1 tablespoon grated lime zest

Caroline’s Favorite: Pumpkin Chip Muffins 

What You’ll Need:

  • 4 large eggs, room temperature
  • 2 cups of sugar
  • 1 can (15 oz.) solid-pack pumpkin
  • 1-½ cups canola oil
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder 
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips 

Jordan’s Favorite: Pumpkin Bread

What You’ll Need:

  • 1 (15 oz.) can pumpkin puree
  • 4 eggs
  • 1 cup vegetable oil
  • ⅔ cup water
  • 3 cup white sugar
  • 3 ½ cups all purpose flour
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt 
  • 1 teaspoon ground cinnamon 
  • 1 teaspoon ground nutmeg 
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground ginger

Annie’s Favorite: Venison Corn Chowder

What You’ll Need:

  • 1 lb venison sausage
  • 1 c. onion, coarsely chopped
  • 4 c. potatoes, peeled cut in ½ inch cubes
  • 1 tsp. salt
  • ½ tsp. marjoram
  • ⅛ tsp. ground pepper
  • 2 c. water
  • 1 (17 oz.) can creamed corn
  • 1 (17 oz.) can kernel corn 
  • 1 (12 oz.) can evaporated milk

Bridgette’s Favorite: Apple Cinnamon Cheesecake

What You’ll Need:

  • ½ cup butter, softened 
  • ¼ cup packed brown sugar 
  • ½ teaspoons ground cinnamon 
  • 1 cup all-purpose flour
  • ¼ cup quick-cooking oats 
  • ¼ cup finely chopped walnuts

Filling: 

  • 2 packages (8 oz) cream cheese, softened 
  • 1 can (14 oz) sweetened condensed milk
  • ½ thawed apple juice concentrate 
  • 3 large eggs, lightly beaten

Topping: 

  • 1 tablespoon butter 
  • 2 medium tart apples, peeled and sliced
  • 1 teaspoon cornstarch
  • ¼ teaspoon ground cinnamon 
  • ¼ cup thawed apple juice concentrate

Amanda’s Favorite: Canadian meat pie

What You’ll Need:

  • 1 ¼ lb ground pork
  • ½ lb ground beef
  • ¼ pound ground veal
  • 1 cup grated peeled potatoes
  • ½ cup grated onion
  • 3 garlic cloves, minced
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • ¼ teaspoon dried savory
  • ¼ teaspoon rubbed sage
  • ⅛ teaspoon ground cloves
  • ¼ cup plus 2 tablespoons water, divided 
  • ¼ cup dry bread crumbs
  • 1 egg
  • Pastry for double-crust pie (9 in.)

Carleton’s Favorite: Oxtail Soup

What You’ll Need:

  • 1 lb beef oxtail
  • 1 lb cubed beef stew meat 
  • 6 potatoes, chopped 
  • 2 onions, chopped
  • 2 roma (plum) tomatoes, quartered
  • 6 stalks celery, chopped
  • 2 carrots, chopped
  • ½ medium head cabbage, chopped
  • 2 cucumbers, sliced
  • 4 cubes beef bouillon
  • Ground black pepper 

Darlene’s Favorite: Chicken Pot Pie

What You’ll Need:

  • 1 refrigerated pie crust
  • ⅓ cup butter or margarine 
  • ⅓ cup chopped onion 
  • ⅓ cup all purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper 
  • 1 ¾ cups progresso chicken broth
  • ½ cup milk
  • 2 ½ cups shredded cooked chicken 
  • 2 cups frozen mixed vegetables, thawed 

Hillary’s Favorite: Meatloaf muffin with sweet potato topping

What You’ll Need:

  • 1 ½ lb ground beef 
  • 2 tsp. Cooking oil 
  • 1 small onion
  • 3 garlic cloves 
  • ½ bbq sauce 
  • 1 tsp drive thyme 
  • ½ tsp. salt
  • ½ tsp. Black pepper 

Topping: 

  • 2 medium sweet potatoes, peeled and cubed 
  • 1 tbsp. Coconut oil or ghee 
  • ¼ tsp. salt 

Stephanie’s Favorite: Apple pie 

What You’ll Need:

  • ½ cup sugar
  • ½ cup packed brown sugar
  • 3 tablespoons all purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoons ground nutmeg
  • 6-7 cups thinly sliced peeled tart apples
  • 1 tablespoon lemon juice
  • Pastry for double crust pie (9 in)
  • 1 tablespoon butter
  • 1 large egg white
  • Additional sugar

Tamara’s Favorite: Homemade mac and cheese

What You’ll Need:

  • 8 oz uncooked elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated parmesan cheese 
  • 3 cups milk
  • ¼ cup butter
  • 2 ½ tablespoons all-purpose flour 
  • 2 tablespoons butter
  • ½ cup bread crumbs
  • 1 pinch paprika

Jess’s Favorite: Apple Crisp

What You’ll Need:

  • 2 ½ cups old-fashioned oats
  • 1 ½ cups (packed) golden brown sugar
  • 1 cup all purpose flour
  • 2 sticks chilled, unsalted butter cut in ½ inch cubes
  • Nonstick vegetable oil spray
  • 4 pound large granny smith apples, peeled in half 
  • 3 tablespoons fresh lemon juice 
  • 1 tablespoon ground cinnamon

Ross’s Favorite: Venison Chili

What You’ll Need:

  • 1 lb pinto or black beans
  • 12-16 dried ancho, guajillo, pasila, or mulato chiles
  • ½ lb mexican chorizo or bacon
  • 2-3 lb venison, ground or dices 
  • 1 large onion, dices 
  • 6 cloved to 8 garlic, chopped
  • 2 tablespoons sweet or smoked paprika
  • 2 tablespoons cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon chipotle powder 
  • 2-3 tablespoons tomato paste
  • 1 cup of black coffee
  • 3 tablespoons molasses 
  • Quart beef or venison broth
  • Salt 
  • Cilantro and shredded cheese for garnish

Crystal’s Favorite: Apple Crisp with vanilla ice cream 

What You’ll Need:

  • 2 ½ cups old-fashioned oats
  • 1 ½ cups (packed) golden brown sugar
  • 1 cup all purpose flour
  • 2 sticks chilled, unsalted butter cut in ½ inch cubes
  • Nonstick vegetable oil spray
  • 4 pound large granny smith apples, peeled in half 
  • 3 tablespoons fresh lemon juice 
  • 1 tablespoon ground cinnamon

Stephen’s Favorite: Corn Chowder

What You’ll Need:

  • 1 tbsp butter
  • 1 strip bacon
  • ½ large yellow onion, chopped
  • ⅓ cup diced red bell pepper
  • ½ cup small diced carrots 
  • ½ cup small diced celery
  • 4-5 ears of sweet corn, kernels removed from cobs
  • 1 bay leaf
  • 4 ½ cups milk 
  • 2 medium yukon gold potatoes peeled and diced 
  • 3 teaspoons of kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves

Christina’s Favorite: Apple Crisp with Vanilla Ice Cream

What You’ll Need:

  • 2 ½ cups old-fashioned oats
  • 1 ½ cups (packed) golden brown sugar
  • 1 cup all purpose flour
  • 2 sticks chilled, unsalted butter cut in ½ inch cubes
  • Nonstick vegetable oil spray
  • 4 pound large granny smith apples, peeled in half 
  • 3 tablespoons fresh lemon juice 
  • 1 tablespoon ground cinnamon

Keisha’s Favorite: Beef Stew

What You’ll Need:

  • 1 tbsp. Vegetable oil
  • 2 lb beef chuck stew meat 
  • 1 tbsp extra-virgin olive oil 
  • 1 onion, chopped
  • 2 carrots, peeled and cut into rounds
  • Kosher salt
  • Freshly ground black pepper
  • 3 cloves garlic, minced
  • ¼ c. tomato paste
  • 6 c. low-sodium beef broth
  • 1 c. red wine 
  • 1 tbsp. Worcestershire sauce 
  • 1 tsp. Dried thyme 
  • 2 bay leaves
  • 1 lb. baby potatoes, halved 
  • 1 c. frozen peas
  • ¼ c. freshly chopped parsley, for garnish

Brian’s Favorite: Fresh Rainbow Trout cooked with cajun seasoning

What You’ll Need:

  • 4 (6 oz) farm-raised rainbow trout fillets (½ in thick)
  • 2 teaspoons extra-virgin olive oil
  • 1 tablespoon cajun seasoning
  • 2 tablespoons chopped fresh parsley
  • 1 green onion, chopped
